Copyright © 2010 Guess Outdoors. All Rights Reserved. PORK, It’s not just for breakfast anymore! (or is it…) This is the classic Texan Guisada, with a little Yucatan twist thrown in. This savory wild hog stew is served over eggs with a few un-local, (but good), accompaniments. Fried bananas, roasted green chilies, black beans, and feta cheese. Everything goes on a fried corn tortilla and believe it or not, breakfast just beat dinner!   Ingredients - Guisada 2 # Wild Boar Loin, cubed 1/3 C. Olive Oil 3 Cloves Garlic 1 tsp. Cumin Seed 1 tsp. Red Chile Powder 2 Can Beef Stock 1 ea. Onion, chopped 2 Ea. Tomato, Deseeded, chopped 2 Tbsp. Flour To Taste Kosher Salt To Taste Black Pepper   Directions 1) Combine pork loin cubes in a bowl with salt, chile, and cumin and mix well. 2) Add oil to a large pot, heat well, and add pork cubes. 3) Sauté’ pork for 10 mins. until well browned, then add onion and garlic.     Cook while stirring for 2 mins. 4) Add flour to mixture in pot and stir to mix well. 5) Add beef stock and tomato and simmer on low heat for 45 min. until pork     is tender. 6) Season to taste with salt and black pepper. Reserve warm.   Ingredients - Accompaniments 6 ea. Eggs, cooked scrambled 8 Ea. Corn Tortillas, fried 3 Ea. Bananas, sliced and fried 3 Ea. Green Chile, roasted & sliced 1 C. Feta Cheese, crumbled   Assembly Place 1 fried tortilla on plate, top with scrambled eggs, banana, and green chile. Serve Next ladle Guisada stew over everything and top with crumbled Feta cheese.
